Lactic Acid Powder | Common Formulation Challenges

Every food formulation R&D and production manager has encountered these troubles. Polifar Lactic Acid is designed to solve these problems.

Unsatisfactory Acidity Control

The actual acidity may differ from the target, and pH levels may fluctuate. Food ingredients respond differently to acidity, extending formulation development and increasing R&D and production costs.

Poor Taste and Flavor

When multiple ingredients are combined, the acidity may become too sharp and the taste unbalanced, compromising the sensory quality of the finished product.

Inconsistent Raw Material Batches

Variations in liquid concentration, powder impurities, color, and odor can lead to inconsistent product quality, even when the same formula is used.

Processing and Application Challenges

Some acidity regulators are incompatible with proteins, hydrocolloids, and other ingredients, potentially causing separation or precipitation and complicating processing.

Clean-Label Requirements

Customers increasingly require clean-label products for export to multiple markets. Products that do not meet these expectations may face market limitations.

Unreliable Supply Chains

Price fluctuations are common, but some suppliers may breach contracts or refuse to ship when prices rise, disrupting production schedules and plans.

Polifar Lactic Acid | Naturally Fermented for Clean-Label Formulations

Applications of Lactic Acid in the Food Industry

Meat & Poultry & Seafood Processing

Challenge: Most poultry, meat and seafood products are susceptible to spoilage because they are high in moisture and become tender.

Solution: Apply a 5–10% food grade lactic acid solution by spraying, soaking, or marinating. It may be combined with small amounts of sodium lactate or potassium lactate to lower product pH, inhibit harmful bacteria, retain moisture, and improve tenderness.

✓ Chilled meat shelf life may be extended by 3–5 days under suitable conditions, while better color is maintained, nitrite use may be reduced, and microbial growth can be better controlled.

Beverages & Alcoholic Drinks & Dairy Products

Challenge: Unsuitable acidity regulator may make juice taste sharp and harsh. Some fruit, milk, fermented dairy products, create off flavors in acid.

Solution: Add 80% liquid L‑lactic acid or combine it with other acidity regulators, flavors, minerals, and other ingredients as appropriate.

✓ A smoother, more natural acidity and a more balanced flavor profile, with less harsh sourness. Dairy emulsions may also remain more stable and resist separation.

Applications in Seasonings & Sauces

Challenge: Strong acetic acid aromas can make acidity difficult to balance, while sauces may be too pungent or spoilage that shortens shelf life.

Solution: Replace part of the acetic acid with lactic acid while maintaining the target total acidity. Adjust the pH of seasonings and sauces to help create conditions that inhibit microbial spoilage and stabilize flavor.

✓ A gentler sour taste that retains the characteristic vinegar note, with a smoother mouthfeel and more stable flavor throughout shelf life.

Pickled Vegetables

Challenge: Pickled vegetable products develop an overly strong vinegar aroma, or support unwanted yeast spoilage.

Solution: Add lactic acid to adjust acidity, help inhibit microorganisms, and preserve color.

✓ Crisp texture, brighter color, and a milder vinegar note.

Bakery & Noodle Products

Dough fermentation conditions and bread can become moldy, or stale.

Solution: Add food grade lactic acid powder to support a more stable fermentation environment. When appropriate, combine it with food grade calcium propionate to slow mold growth and help extend shelf life.

✓ Improved dough fermentation conditions and softer bread with better flavor.

Confectionery & Powdered Beverages

Liquid acid may be unsuitable for some confectionery processes, and hard candy can develop sugar crystallization or graining.

Solution: Use encapsulated lactic acid powder or 60% lactic acid powder to help reduce sugar graining.

✓ A balanced sweet and sour taste, a fuller flavor profile, and improved storage stability.

Emerging Applications for Lactic Acid

As lifestyles evolve, demand for convenience continues to grow. Prepared meals, ready-to-eat foods, and clean-label products are emerging areas of opportunity.

Prepared Meals and Ready-to-Eat Foods
Challenge: Prepared meals and ready-to-eat foods are subject to strict regulatory requirements. However, intensive sterilization can damage food texture and taste.
Solution: Lactic acid can complement heat-based preservation strategies by helping inhibit microorganisms, potentially reducing the need for intensive heat treatment and its impact on sensory quality.
Lower heat-treatment intensity may be possible in validated processes, helping preserve the ingredients' original flavor while maintaining product safety and stability.
Premium Clean-Label Foods
Challenge: Some acidity regulators may not meet clean-label formulation requirements, limiting the development of premium products.
Solution: Use food-grade lactic acid derived from natural fermentation to simplify ingredient declarations where regulations permit. Polifar can provide relevant compliance documentation.
Improved suitability for premium markets, smoother export reviews, and opportunities for business growth.
