E415, xanthan gum powder, is a light yellow to white, free-flowing microbial polysaccharide powder produced by fermentation, purification, and drying of Xanthomonas auricula-judae.
It is typically classified as a food thickener, readily soluble in hot and cold water, exhibits pseudoplasticity, and is resistant to high temperatures, salts, alkalis, and acids. It is usually added in very small amounts to food to solve problems such as solid precipitation, oil-water separation, and water separation.

What Is Xanthan Gum Used in Food?


Food-grade xanthan gum assists many daily-life foods. When xanthan gum powder is incorporated into food formulations, it mainly increases the overall viscosity of food to prevent thin-bodied texture. It suspends and stabilizes solids to reduce precipitation in fruit juices and beverages. In sauces, it supports stable mixing of water and oil to avoid oil separation and floating oil. In yogurt and frozen products, it prevents water syneresis and crystal formation that would impair overall mouthfeel. Thanks to its shear-thinning (pseudoplastic) property, its viscosity drops during processing for easy handling and recovers upon standing, facilitating finished-product filling.
