  • IntroductionXanthan gum is a widely used polysaccharide known for its thickening, stabilizing, and emulsifying properties. Different industries require xanthan gum with varying levels of purity and performance, leading to three main grades: industrial grade, food grade, and cosmetic grade.
  • Xanthan gum is a microbial exopolysaccharide produced by Xanthomnas campestris with carbohydrates as the main raw material (such as corn starch) by fermentation technique.
  • Xanthan gum has a unique rheology, good water solubility, stability to heat, acid and alkali, and good compatibility with various salts. As thickener, suspension agent, emulsifier and stabilizer, it can be widely used in more than 20 industries such as food, petroleum and medicine. It is currently the largest and most commonly used microbial polysaccharide in the world.
